Hi everyone, this week I’m bringing you one of the easiest and healthiest recipes on the planet. I’ve been meaning to try this for ages and it turned out really well! It’s super healthy with only 2 ingredients; banana and egg! This is an ideal healthy breakfast if you want something filling and slightly different, it’s great because it feels like a treat but actually it’s really healthy. You won’t believe how amazing they taste!
- Mash the banana into a bowl then add the two eggs and whisk until the banana is all mixed into the egg.
2. Heat a small frying pan with a small amount of oil just like you would when making regular pancakes. Make sure it’s not to hot though otherwise the pancakes will just burn.
3. Poor 1/3 of the mixture in till it forms a circle and cook for about a minute each side, you’ll know when it needs turning as it no longer sticks to the pan. Then just repeat! The mixture makes about 3 pancakes.
4. Serve and enjoy! You can accompany these with maple syrup as an extra treat as these are already super healthy so a little syrup wont hurt! I chose to chop up another banana on top but you could also add other fruits such as raspberries, strawberries or blueberries.
